Tender, melt-in-your-mouth Hasselback Sweet Potatoes smothered with Garlic Herb Butter look wonderfully gourmet for holidays and special occasions but are every day easy!

While these Hasselback Sweet Potatoes look impressive, the only skill required is slicing and stirring in order to make them! Serve them with sour cream, goat cheese or melt Gouda in between the slices for extra decadence!

All special occasions require some sort of potatoes because they are one of the best foods on. the. planet. From myPotatoes Au Gratin with Baconto my Company Mashed Potatoes, to mySlow Cooker Mashed Potatoes, I have a hard time choosing which potatoes to serve and it just got more difficult with thesedeceptively gourmet melt in your mouth Hasselback Sweet Potatoes. You need them in your culinary back pocket. They not only are company beautiful but boast a crispy outside and soft, creamy inside and melt-in-your-mouth delicious.

How to Make Hasselback Sweet Potatoes

While these Hasselback Sweet Potatoes look impressive, the only skill required is slicing and stirring in order to make them! Are you ready?

  • First, choose narrow sweet potatoes (I buy the garnet yams) that are uniform in size and scrub them clean. Pat dry and place on a cutting board. If they are super wobbly, you can take a small slice off the bottom to create a flat sweet potato bottom – no one will ever notice!
  • Next, slice the potatoes into 1/8” slices without slicing all the way through the potato – you will want to leave about ½ inch of the potato intact on the bottom. Try and make the slices as uniform as possible as this will ensure more even cooking, but don’t stress too much about it.
  • Next, add your potatoes to a lightly greased, foil lined pan.
  • Coat all over with olive oil and bake for 40 minutes.

  • Now, what takes these sweet potatoes from good to AMAZING – the Garlic Herb Butter! To make, whisk together melted butter, olive oil, freshly minced garlic, parsley, chives, thyme, rosemary, paprika, salt, pepper and nutmeg. It’s a few ingredients but all you do is dump and whisk for a super quick, super delectable butter bath (can we just pause and reflect on the beauty that is a butter bath?!!) that creates a dynamic, balanced medley of flavors to infuse your potatoes through and through.

  • Brush this butter in between the slices and return the potatoes to the oven to finish cooking, about 10-20 minutes or until the potatoes are super tender in the center with a nice crispy outside.

  • Remove the potatoes from the oven. There will be some Garlic Herb Butter that has a has accumulated at the bottom of the pan that you will want to drink – but instead, slather it all over your Hasselback Sweet Potatoes and either top with Goat Cheese (my fav!) or sour cream or both!

Garnish with fresh parsley and chives if you desire and your ordinary sweet potato has just become Hasselback Sweet Potatoes and the star of the night!

Tips and Tricks forHasselback Sweet Potatoes

  • My grocery store calls sweet potatoes garnet yams. So look for garnet yams or your sweet potatoes might actually be white inside!
  • Purchase sweet potatoes that are uniform in sizes so they cook evenly.
  • Scrub the outsides of the potatoes clean because guests are more than likely eating the skins – we don’t want any grit in their teeth.
  • Pat the potatoes very dry after washing or the skins won’t get as crispy.
  • Don’t slice the potatoes all the way through the potato. Some people like to lay their potato in between chopsticks which will prevent you from slicing all the way through the potato.
  • Try and make the slices as uniform as possible as this will ensure more even cooking.
  • After the potatoes are cooked, you can add slices of Gouda or your favorite cheese on top of theHasselback Sweet Potatoes and bake until melted for extra decadence.

Hasselback Sweet Potatoes with Garlic Herb Butter

These Hasselback Sweet Potatoes are tender, melt-in-your-mouth and bursting with garlic herb, butter flavor! They look wonderfully gourmet for holidays and special occasions but are everyday easy!

Ingredients

  • 4 medium sweet potatoes/garnet yams
  • 3-4 tablespoons olive oil

Herb Butter

  • 6 tablespoons unsalted butter melted
  • 2 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 TBS EACH finely chopped fresh parsley, fresh chives (or 1 tsp. EACH dried)
  • 1 tsp EACH finely chopped fresh rosemary, fresh thyme (or heaping ¼ tsp EACH dried)
  • 1/2 tsp EACH paprika, salt
  • 1/4 teaspoon pepper
  • pinch ground nutmeg

Optional, HIGHLY RECOMMENDED

  • 8 ounces regular or smoked Gouda cheese, thinly sliced into 1-inch squares

Toppings

  • sour cream
  • Herb Goat Cheese
  • green onions

Instructions

  • Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.

  • Wash and dry potatoes. Make a series of 1/8-inch slices along the top of each potato, stopping ½ inch from the bottom so you don't slice all the way through the potatoes.

  • Add the potatoes to the baking sheet and drizzle with some olive oil. Rub the olive oil all over the potatoes. Bake sweet potatoes for 40 minutes. Towards the end of the 40 minutes, whisk all of the Herb Butter ingredients together (not too early, or the butter will harden).

  • Remove the potatoes from the oven and brush in between the slices with the Herb Butter.

  • Return to the oven and bake another 10-20 minutes OR until the center potato slices are very tender. Brush sweet potatoes with any of the butter that has accumulated at the bottom of the pan. Season with additional salt and pepper to taste. Serve with Sour Cream or Herb Goat Cheese or see Gouda option below.

  • Optional: When potatoes are fully cooked, remove from oven and distribute Gouda evenly in between every few potato slices. Return potatoes to oven and cook just until cheese is melted, 3-5 minutes more.

    These are delicious! We didn’t add any cheese or additional toppings (not that I am opposed to either…this was just a spur of the moment dinner and we didn’t have the extras on hand), but they were incredible all the same and cooked perfectly. Thanks for another keeper!
